Leading Sydney Hospitality group Applejack has unveiled a new look for the Forrester’s pub in Surry Hills following an extensive $1.5M renovation. The pub, which is now open to the public, was
established in 1921 and has been proudly serving the Surry Hills neighbourhood for almost 100 years. Applejack took ownership of Forrester’s earlier this year with a vision of creating a community-centric
watering hole with an Applejack twist – comprising of three drinking and dining spaces within one venue – Phylli’s restaurant, a public bar and an upstairs entertainment and dining space.
Applejack drew inspiration from the building’s century-old history and original ‘bones’ incorporating natural timbers and a classic, neutral colour palette with pastel furnishings. The three spaces are tied
together by Applejack’s signature love of greenery and high-variety dining experiences. Renovated spaces include the following:
Phylli’s restaurant is the go-to destination for long-lunching, casual dining, or a catch-up with friends. Bringing the outside in, Phylli’s dining room is filled with natural light, lush greenery, and lux timber
finishes. Sydneysiders are invited to admire the giant mural painted by Sydney-based artist, Mielo, whilst sipping their way through the new spritz cocktail menu or getting stuck into the well-considered
wine selection. The menu encapsulates tantalising shared styled dishes perfect for grazing over with friends along with some classic solo-dining options. Drinkers will be able to book in for Bottomless
Lunches at Phylli’s from 14 November from $79 per person.
Opting to restore and highlight the pub’s original historic features, Applejack has kept the Public Bar’s exposed Oregon beams, hardwood floors and tri-folding timber sash windows. Adding a bespoke
timber back bar to complement period feature lighting, and natural materials such as leather to create a ‘lived-in’ feel. The Public Bar will pour a strong range of local craft beers and Australian wines and is
the perfect place to catch the latest sporting fixtures on the big screens.
Upstairs at Forrester’s:
Designed with entertainment in mind, Upstairs at Forrester’s incorporates comfortable booth seats and a separate bar in its dining space. Upstairs at Forrester’s will host weekly trivia nights and comedy
evenings for those in need of a good belly laugh. Guests can order from the full dining menu as they settle in for a fun-filled evening with mates or colleagues.
Forrester’s food menu is Applejack’s fresh take on pub food with flavours guided by the Americas – classic Latin flavours fused with North American influences. It offers share options perfect for grazing
along with solo dining options. The menu is a collaboration between Head Chef Jon Barrios (Bopp & Tone and The Botanist) and Group Executive Chef Jason Roberson.
Serving up snack-sized bites and share style dishes, the menu includes Kingfish tiradito and Oysters with lime, shallot vinegar and red chilli oil. Quintessential pub favourites such as the $10 steak remain
on offer, along with a Pork belly and ham Cuban Sambo and classic “Americano cheeseburger”. There will also be a bounty of flavourful salads, greens, and vegan dishes such as the Grilled-peach salad with
grapefruit, fennel, rocket, and pistachio. Substantial shares and mains include Ora king salmon and an 18-hour slow-roasted “Lamb Barbacoa” served with a salsa verde, radish and warm corn tortillas.
Forrester’s will always be a pub at heart, offering an eclectic selection of tap beers featuring iconic Aussie brews, alongside a solid independent craft offering. For wine lovers, there is an all Australian
line up curated by Group Bars Manager Lachy Sturrock and Sommelier Consultant Dan Simmons. The drinks menu shines the spotlight on local state growers and producers who focus on sustainable,
organic farming – wines with place and purpose. As with all Applejack venues there is a solid cocktail offering with a focus on classic and seasonal drinks.
