Last night, The Morrison Bar and Oyster Room held everyone’s favourite annual Oyster Festival launch event, in preparation for the official start on 1st August and Sydney Social 101 was thrilled to be involved.

Internationally awarded Executive Chef Sean Connolly worked with The Morrison to host a line-up of exciting activities and an enticing feast, as a teaser for what’s to come throughout the festival in August.

Throughout the evening, guests were educated on the best way to shuck oysters, and were given the opportunity to taste the various types, while sipping on Chandon champagne, oyster cocktails and different kinds of Scotch whisky, with whisky ambassador Sean Baxter.

A painted mermaid (we’re not even joking!) and the impressive Jurassic oyster created social media moments, which suited perfectly, as attendees were encouraged to participate in an Instagram competition with the prize of a Cerrone pearl necklace, valued at $900 up for grabs!

Located conveniently in Sydney’s CBD, The Morrison Bar and Oyster Room is already renowned for its seasonally fresh shucked-to-order oyster menu, managed by Executive Chef Sean Connolly. Yet, The Morrison’s oyster passion becomes an obsession in August, which is all about celebrating Australia’s best oyster producers and showcasing an array of these delicacies that are impossible to resist.


The Morrison Oyster Festival-goers will be able to enjoy the following activities throughout August:


  • Whisky and Oyster Masterclass – These two may seem like an odd duo, but we encourage you to come and sip on The Morrison’s finest whisky, slurp those deliciously smooth oysters, and enjoy the fun of two great delicacies coming together.The dedicated wait staff will be available to recommend the most appropriate combination of each to satisfy your taste buds. This will be held on 18th August


  • Shucking Station – Watch as Sean Connolly’s team of chefs expertly shuck your oysters to order, ask them for their top tips for getting the best out of these delicate little beauties. Available throughout the Oyster Festival


  • ‘Oyster Hour’ – Mollusc madness reigns everyday of the Oyster Festival with our ever popular Oyster Hour. Each day between 6pm and 7pm all oysters are $1 each. It’s a shucking good time, so don’t miss out!


  • Beer, wine and cocktail specials throughout the month – match your favourite oysters your way, with great wine flights, cocktails and beer specials throughout the Oyster Festival.


“Every year is a success at The Morrison Oyster Festival, and this year we are excited to introduce a new variety of events, activities and masterclasses to suit all Sydney-siders”, says Executive Chef Sean Connolly.


There will be over 20 types of oysters on display throughout the festival from across the country, including the most prolifically grown Pacific oyster, the Sydney Rock oyster and uniquely giant Jurassic oyster, just to name a few. All oysters will be delivered from the grower’s daily; to ensure both the freshness and taste are flawless for each individual one.

The Morrison Oyster festival will run from Saturday 1st August – Monday 31st August 2015.
