This winter, journey through Mexico without leaving Sydney at The Butler. The famed Potts Point
restaurant will showcase speciality dishes and cocktails from 7 regions across Mexico over 7 weeks.
Launching Monday 25 July, 7 Flavours of Mexico will explore the rich cultural history, diversity, and
natural splendour of this North American country each week.

Head Chef Amber Doig explores her passion for Central America by presenting 7 weeks of her favourite
regional specialties that inspire her cooking today.

New Zealand born Doig started her career under the mentorship of Sydney chefs James Viles, and
later Vanessa Martin, where she opened hatted Mexican restaurant Piave in Balmain. Enhancing her
skills in New York City, she worked with superstar chef Alex Stupak at the Mexican-inspired Empellon
restaurant group. Doig’s creative flare takes traditional Ibero-American techniques, methods and
flavours and puts a modern slant on The Butler’s shared style menu.

Applejack Group Bars Manager Lachy Sturrock and The Butler Bars Manager Jaicob Green Hill have
curated 7 Agave inspired drinks that celebrate each region and can be paired with the food or enjoyed
individually.
