Sydney loves an excuse to drink Champagne on a Tuesday. (No? Just Us?) So when that excuse comes with a lobster club sandwich on the side, you bet we’re already reaching for our reservations app.
Landing across select Solotel venues from Saturday 1 August to Monday 31 August, Champagne Club is here to remind us that some pairings never go out of style: bubbles and a properly good sandwich.
For $40, you’re getting a glass of Moet & Chandon Brut Imperial alongside a lobster club sandwich and housemade crisps — the kind of elevated-but-effortless indulgence that doesn’t need a birthday, an anniversary or really any excuse at all.
The concept draws its DNA from classic London institutions like The Savoy and The Wolseley, plus a nod to traditional American chophouses, before being filtered through the world of Matt Moran’s venues: Aria, Chiswick, North Bondi Fish, Chophouse and Brisbane’s Riverbar & Kitchen.
The sandwich itself is the work of Aria executive chef Tom Gorringe, built on soft shokupan bread and layered with lobster, LP’s mortadella, pickled green tomato, lettuce and spicy mayonnaise — proof that “simple” and “special” aren’t mutually exclusive.
“The best club sandwiches are all about balance and simplicity,” says Gorringe. “We wanted to keep the comfort and familiarity of an original club sandwich, but introduce a few ingredients that make it feel a little more special. The lobster and mortadella add a layer of richness, while the pickled tomato cuts through the flavours. Paired with a glass of Moet, it’s a perfect combination.”
Matt Moran himself sums up the appeal best: “Champagne and a club sandwich are one of those pairings that never goes out of style. There’s something great about giving people the permission to have a little indulgence without needing an occasion.”
Here’s where to find it: Champagne Club will be served at the bar at Aria and Chophouse; in the bar on Saturdays and Sundays (and the main dining room the rest of the week) at Chiswick; and throughout the venue at North Bondi Fish and Riverbar & Kitchen.
Champagne for breakfast might be frowned upon. Champagne with a lobster club sandwich in the middle of a Wednesday? Consider that fully sanctioned for the month of August.
