DAY OF THE DEAD PREVIEW MASTERCLASS

DOTD.22.10.2015-32There’s a lot more to tequila than salt, lemon & lime, as we learnt from our Day of the Dead preview master class with Ben Davidson from Olmeca Altos tequila. He uncovered the origins and development of Mexico’s signature cocktail – whilst we enjoyed some great cocktails and El Loco’s infamous tacos, quesadillas and salads.

Here are some of the recipes you should definitely try at home:

Tommy’s Margarita

“The new breed of Margarita invented at Tommy’s Mexican Restaurant in San Francisco by industry legend Julio Bermejo”.

  • 45ml Altos Plata
  • 15ml agave syrup
  • 30ml fresh lime juice
  • Shake with ice and strain into a tumbler glass filled with ice.

Altos Paloma

“The most popular tequila drink in Mexico. What the locals drink”.

  • 45ml Altos Reposado
  • 30ml pink grapefruit juice
  • 60ml lemonade
  • Add ingredients to a tall glass and fill with ice. Stir and garnish with a slice of grapefruit.

Altos Batanga

“Invented at La Capilla bar in the town of Tequila. Stirred with a knife”.

  • 45ml Altos Plata
  • Juice of half a lime
  • 90ml cola
  • sea salt rim
  • Add ingredients to a tall glass and fill with ice. Stir and garnish with a lime wedge.

CHAPTER ONE BONDI OPENING_QMS8001Bobbi O'Sullivan

We love a good happy hour, and on Wednesday attended the VIP opening night of Chapter One Bondi. Hoppo and his wife Stacey are the proud new owners of Chapter One Bondi which features a Japanese influenced menu by night, and Bondi brunch food by day. We enjoyed performances by Bongo the Bear (!) and enjoyed his delicious new Pineapple Cider.

The Bachelorette’s contestants Dave Billsborrow the Plumber, and his best mate Davey Lloyd the carpenter and Hoppo’s Bondi rescue co-stars were just a handful of the celebs we spotted on the night..

SOKYO NIGHTS

Luxe restaurant Sokyo and super club Marquee joined forces for an evening of slick sounds and Japanese dining. Marquee’s DJs commanded the decks while Sokyo Executive Chef, Chase Kojima delivered a special menu featuring exquisite canapés, sashimi, grilled robata, tempura, omakase sushi and other Sokyo favourites. Shout out to the superb bar staff. MR

Chocoholics take note; this was an evening filled with indulgent chocolates and decadent desserts, it was truly divine! Not to mention the delicious smooth Guylian Praliné Cream Liqueur alongside the carefully crafted masterpieces. We couldn’t resist the Guylian Opera My Way (Belgian dark chocolate mousse with espresso coffee, butter cream layers, hazelnut and Belgian cocoa roulade) just one of the heavenly desserts in their creative assortment of signature Guylian Belgian Chocolate desserts!

QT SYDNEY’S TOAST TO THE POWER OF FACIAL HAIR THIS MOVEMBER

Refined Barber shop grooming, performances by the senior state Champion Barber Shop Quartet ‘Hijacked’ and Chivas Regal-infused cocktails; combined to create the perfect setting for the launch of hotel QT Sydney’s Movember fundraising initiatives and a new partnership with fellow Australian Charity – Beard Season.

The Beard Season movement uses the beard to act as an icon in the fight against melanoma and to book a skin check today. QT Barber Shop is helping spread the word by stocking the Beard Season Playing Cards which feature images taken by Mr Elbank and with some of the greatest beards in the world. Robert J Carrol of Strand Hatters showcased the latest trends in headwear which was an appropriate message alongside the skin-check campaign.

The night was a great celebration of gentlemanly perfection from impeccable style to excellent health and immaculate grooming. It was made complete with Ben Davidson; passionate ambassador of Chivas Regal hosting tastings of 12 year old, Extra, and 18 year old whiskies as well as the carefully crafted signature Chivas Collins cocktail. YELLOWEEN

Marquee Sydney played host to Veuve Clicquot’s international annual party Yelloween this October 31st for what turned out to be a scarily impressive night! VIP guests were offered a batwing flute of Veuve Clicquot on arrival to the infamous Boom Box and nibbled on canapés as the night heated up. While many went all out this year with fantastical Yelloween costumes, the best were certainly the coulrophobia inducing Marquee Dancers in frighteningly sexy clown costumes.

The night hit overdrive when favourite Dutch DJ Ferry Corsten stepped up to the main stage bolstered by Marquee’s incredible laser set, smoking guns and shooting silver sparkles across the busy dance floor. Revellers were treated to some of his classic trance tunes, such as Back To Paradise and a few new tracks like this writer’s favourite, Hearts Connected. His energy and style were incredible – so much so that he extended his set, playing well beyond his original timing. Definitely a great Yelloween treat! AP.

MANTA RESTAURANT & BAR RELAUNCH PARTY

After nine years on the iconic Woolloomooloo Wharf, Manta RestauraManta 2nt and Bar has made some big
changes and we were delighted to check them out at their sophisticated relaunch drinks. The full refurbishment reveals a fresh and modern look to the interior combining soft gold tones, raw oak and a dramatic collection of brass chain chandeliers. Particularly lovely were the vast mirrors that reflected the light and the waterside scene outside. The new sommelier has selected some delicious wines to complement a new refined, simplistic menu with a focus on fresh, seasonal and local produce. The oysters simply can not be beaten! CG.

SPRING ST SOCIAL SUMMER LAUNCH

The Summer Launch Party for Spring Street Social in Bondi Junction did a great job of showing off its recent refurbishment and the bar area was noticeably more spacious than on previous visits to this quirky, underground establishment. The re-arranged seating areas spanned the perimeter of the room, leaving the pathway to the bar clear, which most of you will agree is always a bonus!

Greeted with Deutz Sparkling Brut and bottles of Anchor Steam Ale on arrival, it wasn’t long before we were tempted into trying two new offerings on the cocktail menu, the delicious Mariachi Loco and Honeybee Mine. In addition to cocktails, we were served up treats from the new food menu, the highlight of which was definitely the perfectly-cooked Cheese Burger. As we nibbled we were treated to live artists performing on the corner stage plus a very cheeky burlesque act!sss1

Spring Street Social is the small underground bar that Bondi Junction has really needed as a point of difference to its other watering holes. Perfect for post-work drinks and nibbles or for those wishing to kick-on into the small hours, it stays open until 3am, 7 days a week with no lockout laws applying! RS.
