If your relationship with tequila starts with “lime and salt, and ends with “regret,” Insolente Plata Rosa might be the one to make you reconsider.
The bottle comes from Drink Miro, a local online retailer that launched earlier this year with a pretty simple mission: bring genuine, 100% agave spirits from traditional Mexican distilleries straight to Australian shelves, without the mass-produced stuff that’s given tequila a bad name at one too many house parties.
Insolente Plata Rosa is a good example of why that distinction matters. It’s made in Amatitan, Jalisco – often described as the spiritual home of tequila – using a process that’s stayed in the same family for four generations. It starts with Blue Weber agave, harvested by hand and only once it’s hit exactly the right level of maturity (apparently there’s no rushing this part). The piƱas, or the heart of the agave, are then slow-cooked in stone ovens, a step that turns the plant’s natural inulin into the sweet sugars that eventually become tequila. From there, the juice is fermented and double distilled in copper stills.
The part that sets Plata Rosa apart, though, comes right at the end. Instead of bottling straight after distillation like most blancos, it spends up to 30 days resting in French oak barrels that previously aged red wine – picking up soft pink hues and a subtle fruitiness along the way. The result is a tequila that’s fresh and herbal on the nose, smooth to drink, with notes of cooked agave and just a hint of grape sitting underneath. It sits at 35% ABV, in a 700ml bottle that looks about as good as it drinks – genuinely one of those bottles that earns its spot on display rather than tucked away in a cupboard.
As for how to actually drink it, Miro’s advice is refreshingly low-maintenance: neat at room temperature, over ice if it’s a warmer day, or with a splash of good soda water and a wedge of fresh lime if you want something a little longer. No syrupy mixers required – the tequila’s doing enough of the work on its own.
At $149, this is the kind of bottle you bring out for the friend who swears they “don’t do tequila,” or crack open on a night when you want something with a bit more story behind it than what’s usually on the bar cart.
Insolente Plata Rosa is available now through Drink Miro, alongside a growing range of other agave spirits sourced directly from Mexico’s traditional producing regions.
