Merivale is set to open its highly anticipated rooftop bar at Coogee Pavilion later this month. The latest instalment of the expansive three level venue, Coogee Pavilion Rooftop will be a local oasis where guests can enjoy sensational food, great company and an unrivalled view of the breathtaking Coogee shoreline.
A fun and relaxed social destination for the iconic beachside suburb, Coogee Pavilion Rooftop will be home to four indoor and outdoor bars, a sweeping balcony and one of the best vantage points a Sydney venue has to offer. Laidback and fuss-free, the Rooftop will cater to a wide range of tastes and occasions, from post-beach snacks to cocktails at sunset.
Executive Chef, Jordan Toft, will lead the Rooftop kitchen. Inspired by his travels throughout the Eastern Mediterranean, the menu will be defined by lip-smacking yet simple flavours befitting the Rooftop’s oceanfront home. Think charcoal-grilled meats and seafood kissed by smoke, alongside fresh and punchy sides. The drinks menu, designed by Merivale’s Group Bars Manager Paul Mant, will feature a long refreshing list of summertime cocktails and sharing pitchers bursting with fresh fruit.
Designed as if it was once the conservatory owned by an eccentric botanist, Coogee Pavilion Rooftop will be brought to life by a design team including Kelvin Ho and Emilie Delalande of Akin Creative, Amanda Talbot, Justin and Bettina Hemmes. From overflowing greenery to mismatched Moroccan tiles, each bar will possess an entirely different aesthetic. Beautiful chairs covered in sketches of exotic birds and tables painted by local artist Mayriel Luke will complete the stunning interiors.

Since opening its doors in July, Coogee Pavilion has become a firm favourite among Sydney locals and travellers alike. The ground floor offers a variety of dining experiences and is the ideal location for family get-togethers, weekend breakfasts, coffee dates, light snacks and catching up with friends. It recently won Best Venue Renovation at 2014 Australian Liquor Industry Awards.
