After almost 20 years honing his culinary skills in Sydney’s most exclusive dining establishments, Chef Lucas Doan has brought to life his childhood dream to open his first restaurant, The D’s Bar & Dining, in Marrickville, where he and his family first migrated to in Australia.
Doan uses only the highest quality ingredients for every dish on the menu, for example Appellation oysters, Glacier 51 toothfish and Phoenix Wagyu with a minimum marbling score of 8. Key dishes include The D’s Duck, brined for a minimum of 24 hours and then roasted in house. It is served two ways – Peking style with baos instead of the traditional pancake, as well as duck salad. Other standouts are Beef Pho Tartar made of Phoenix M8 Wagyu, broth jelly, basil, eschalot with sesame rice cracker, Crispy Eggplant Tempura, sweet and sour, coriander, chilli and Beef Suon, ranger valley black angus, in a special reduction sauce with eschalot and coriander, chilli.
An impressive cocktail selection including signatures Coco Phe Martini and Déjà Vu, plus a comprehensive wine and spirits list, complement the exotic menu.
Sydney Social 101 recently dined at The D’s Bar & Dining for dinner. Centrally located and easy to get to by car or public transport, The D’s is a stunning and vibrant oasis filled with stunning furnishings with a traditional twist and a lively atmosphere.
After being warmly welcomed to the team we ordered some drinks and perused the menu. As the designated driver for the evening I enjoyed Watermelon & Strawberry Virgin Mojito while my date had an ice-cold tap Asahi. To start we shared the extremely moreish ‘Prawn Toast’ which featured a large helping of prawn mixed with herbs served on crunchy toast and topped with coriander, perilla, mint and sesame wasabi mayo.
For mains we shared the beautifully cooked ‘Ca Kho’ NZ king salmon served with caramelised demi-glace and topped with perilla leaf , Vietnamese mint, housemade pickle. This dish was also served with a helping of beautifully cooked greens which tasted even more amazing when dipped in the demi-glace. Next we had the melt in your mouth ‘Crispy Eggplant’ tempura with sweet & sour sauce, coriander, chilli and sesame and also a serving of the ‘Edamame Rice’ filled with spinach, broccoli, snow pea and egg. Each dish was beautifully presented, full of flavor and extremely fresh.
Sadly, we ran out of room and couldn’t fit in dessert, so we will definitely be back to try the ‘Banh Chuoi’ banana fritter, coconut sago and peanut and the ‘Pandan Fried Ice Cream’ with butterscotch and peanut.
