Busby’s, a trendy natural wine and record bar brought to you by the hospitality group PUBLIC, has opened its doors on the street level of Oxford House in Paddington.

At its core, Busby’s is a wine and cocktail bar, boasting an extensive and ever-evolving list of wines by the glass, carefully curated by the renowned Mike Bennie of P&V Merchants. This selection includes delightful and accessible offerings from Australian, French, and Italian producers. Some of the highlights encompass the Le Juice Gamay Beaujolais from France and the Chateau Acid Chardonnay from Central Highlands.

In the realm of cocktails, the expert touch of Paolo Maffietti from Maybe Sammy shines through, presenting a concise yet impactful cocktail menu with a special focus on grape-based liquors. The cocktail list comprises five signature creations, each emphasizing the flavors and origins of its ingredients. Notable cocktails include the Abbey Road (featuring Citrus Gin, Vermouth Bianco, Davidson Plum, and Champagne) and the Megatone (a blend of Grappa, Tequila, Ginger Wine, and Pastis), paying homage to the venue’s HiFi inspiration.

While Busby’s primary focus is on beverages, its food menu is masterfully overseen by one of Australia’s most celebrated chefs, Creative Culinary Director Clayton Wells (formerly of Automata). The menu adopts a share-plate style, with seasonal variations, consistently presenting a modern Australian influence, showcasing fresh, vibrant, and unexpected flavors. Opening menu offerings include Sydney Rock Oyster with Blackberry Vinegar & Roasted Kelp Oil, Chicken Liver Parfait with Spiced Pineapple and Liquorice, and Yellowfin Tuna Crudo with Grilled Watermelon and Kefir Cream.

Busby’s boasts a team of hospitality experts, including Venue Manager Beatrice Innocenti (formerly of A’Mare and Bistecca) and PUBLIC’s newly appointed Head of Wine, Harriot Berry (formerly associated with Saint Peter and LoFi Wines).

Inspired by renowned establishments like Bambino in Paris, Bar Sway in Berlin, and LA’s Gold Line Bar, Busby’s emerges as Sydney’s newest destination for casual, everyday natural wine and HiFi entertainment. The venue hosts an exciting cultural program, featuring diverse and full-flavor selections from some of Sydney’s finest artists. On Thursdays, guests can enjoy extended 5-hour residencies, starting on November 2 with Jonti (Stones Throw Records), and regular sessions with iconic selectors The Santamaria Brothers and ex-Secret Sundaze London resident Millie on Fridays. Saturdays are dedicated to playing some of the world’s greatest vinyl albums, uninterrupted from start to finish.

You can find Busby’s within PUBLIC’s first lifestyle hotel, Oxford House, adding to the group’s expanding portfolio of unique concepts across New South Wales and Victoria. Recent successful openings include Ricos Tacos at The Norfolk in Redfern, Puttanesca in partnership with Guy Grossi in Melbourne, and the award-winning El Primo Sanchez in Paddington, with more exciting ventures on the horizon for this year and 2024.
